What a Melon! The Peak Summer Recipe That Everybody’s Talking About

Is there anything better than a ripe, freshly picked watermelon? Its cheerful bright green rind and luscious red interior brighten any table. But watermelon isn’t only enjoyed freshly cut at pool parties and barbecues. By grilling and mixing it with other summer harvest favorites, you can create a sophisticated take on an already crowd-pleasing dish: caprese salad.

Colorful and tangy, with the right balance of sweet and salty, this one is guaranteed to make you a favorite at dinner parties.

Grilled Watermelon Caprese Salad with Balsamic Glaze
Serves 4. Total time: 30 minutes

Ingredients:
2 large round watermelon slices, each cut into 4 wedges
2 tbsp extra virgin olive oil, flavor-infused if desired
1/2 tsp sea salt
1/2 tsp pepper
2-3 tbsp raw honey
1 pint grape tomatoes, quartered
4 oz fresh mozzarella, sliced into bite-size pieces
1 bunch fresh basil leaves
balsamic glaze, to taste

Directions:
1.) Preheat your grill to medium heat.
2.) Brush both sides of each watermelon wedge with olive oil and season all sides with salt and pepper.
3.) Lightly drizzle each wedge with honey and place on the grill, grilling each side for about two minutes.
4.) Remove from grill and add more honey if desired.
5.) Place 2 watermelon wedges on each plate, then add a generous helping of tomatoes, mozzarella, and basil leaves. Season with salt and pepper, to taste.
6.) Drizzle with balsamic glaze, serve immediately, and enjoy!
