My husband and I just returned from a short trip to St. Simon's Island where we enjoyed fresh seafood almost every day. Blackened, broiled, fried, pan sauteed - they prepared it to your taste and seasoned it perfectly. While my personal favorite seafood dish is sole meuniere, and although sole was not offered, several equivalent substitutes were. The following recipe using tilapia comes close to duplicating the method and flavors of meuniere (fish fillets dredged in flour, cooked in butter with lemon).

Although the soft, orange sweet potato is often called a "yam" in parts of North America, the sweet potato is botanically very distinct from a genuine yam which is native to Africa and Asia.
